Beat-the-clock breakfasts for back-to-school

Beat-the-clock breakfasts for back-to-school because kids need to eat breakfast – it really is the most important meal of the day, dietitians say. Including high-quality protein like eggs at breakfast will provide kids with the energy they need to stay focused. Protein helps control the rate at which food energy is absorbed, resulting in lasting energy that stays with kids longer.

So don’t let busy mornings get in the way of a balanced breakfast. Try Eggs-in-a-Hole.

Cut a circle from centers of bread using a round cookie cutter or drinking glass approximately 2-1/4 inches (6 cm) in diameter. Spray a large skillet with cooking spray. Heat skillet over medium heat. Place bread in the skillet. Break an egg into each hole in the bread. Season with salt and pepper. Cook slowly until eggs are set and the bottom of the bread is browned. If desired, turn over and cook the top of the egg.
