Jerky Smashed Potatoes Ingredients
1 1/2 lbs small potatoes (yellow or red)
salt & pepper
1 Tbsp olive oil
3 Tbsp melted butter
Toppings: Cheese, crumbled Cowboy Caviar Peppered Jerky, green onions, sour cream
Jerky Smashed Potatoes Directions
Boil or bake the potatoes.
BOILED: Rinse potatoes and cover cubed potatoes with water in 4-quart saucepan; bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender, about 10 minutes. Drain.
BAKED: Scrub potatoes clean, brush with olive oil, sprinkle with salt and pepper and wrap in foil. Bake at 450°F for 25 minutes.
Once the potatoes are cool enough to handle, place them on a baking sheet and gently smash them with a potato masher, the bottom of a glass or a spatula. Brush the potatoes with the melted butter. Sprinkle with salt and pepper.
Sprinkle the potatoes with cheese and put in oven on broil until cheese is melted.
Place Cowboy Caviar Peppered jerky in the food processor and chopped until crumble like bacon bits.
Top Jerky Smashed Potatoes with crumbled Cowboy Caviar Peppered jerky, green onions and sour cream.
